Michal Snela | Head Chef

Michal studied his apprenticeship at The Artichoke in Old Amersham before moving to London.  He rose through the ranks at Chez Bruce to become Sous Chef and cites Bruce Poole as having a strong influence on his cooking style and menu development. Before joining Charlotte’s Bistro, Michal was Sous Chef at Arbutus and Wild Honey in Central London.  

With a natural flair for genuine hospitality, it is important to Michal that he leads a engaged brigade of chefs who work closely with the front of house team to ensure the very best guest experience.

TOM BYRNE | HEAD BARTENDER

At just 24 years old, Tom heads up the entire bar team and curates the full drinks offering at Charlotte's Bistro. With a real talent for mixology and even handpicking and infusing his own gins, he is the type of bartender that you'll learn a hell of a lot from if you manage to bag the two seats in front of his section at the bar!
